We’ve all been there. It’s 1:30, you’re starving. Take out is going to take way too long. You need something quick, something healthy, something to give you energy.
One of the biggest things I struggled with when I started working from home was having healthy meals at the ready. It should have been easier for me to plan my lunches, as my office was down the hall from the kitchen. It took me a while to get in the swing of things… but I’ve got some staples that keep me fueled.
This has been my go-to sandwich for years. I usually have these ingredients in my kitchen and if you don’t, it’s fairly easy to substitute veggies.
Garden Veggie Sandwich
- 2 slices rye sprouted bread (I like Alvarado Street Bakery)
- 1/4 of a large avocado, sliced
- 2 – 3 slices of tomato
- 1 – 2 rounds of sliced onion (I love onion. If you aren’t a huge fan, add less)
- 6 cucumber slices
- Veganaise
- Stoneground mustard
- Spike
Toast your bread. Once done spread veganaise and mustard on both slices. Next layer the avocado, onion, tomato and cucumber. Finish with a pinch (or 3) of Spike, add the last piece of bread, slice in two. Voila. Lunch is served. 🙂
